Zucchini pizza bites are truly a quick and easy appetizer/snack. It’s the perfect bite of pizza without all the extra carbs from dough. This recipe only uses 8 ingredients! How cool is that? Also, it’s pretty clutch that you can whip up these pizza bites in less than 20 minutes.
I remember the first time I made zucchini pizza bites. It was for Mother’s Day in 2019. My mom was on a strict diet and a lot of the food I made that day did contain bread for the other moms in attendance. So I decided to make my mom and nana these delicious zucchini pizza bites. What’s so great about pizza in general is the toppings of course! There’s so much versatility, I’m not sure where to begin. Here’s a short list of a few possibilities for toppings.
- Pepperoni (our favorite brand is Applegate Naturals)
- Pineapple (another one of my all-time-favorites!)
- Bell peppers
- Sausage
- Buffalo Chicken
- Mushrooms
- Jalapenos
- Onions
- Scallions
- Olives
- Spinach
- Broccoli
Just to name a few…Also, if you’re not a huge fan of tomato sauce try pesto or buffalo or bbq sauce instead.
How to make Zucchini Pizza Bites
On to the good stuff. Now, making these little bites takes no time at all! So, lets quickly discuss how to make them.
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
First, cleaning the vegetables is always the best way to start off. So, make sure to wash off the zucchini before cutting. Slice the zucchini about 1/4-inch thick. If using a medium-sized zucchini you should yield roughly 24 slices.
Place the sliced zucchini on the prepared baking sheet and season with salt and pepper. Top each zucchini round with 1/2 teaspoon of marinara sauce, 1 teaspoon mozzarella, and your favorite topping of choice. Sprinkle basil and oregano on top. Bake until the cheese has melted, about 5-8 minutes. Serve hot.

- 1 tsp Oregano
- 1 tsp Basil
- Fresh ground black pepper
- Kosher Salt
- ¼ cup Marinara Sauce
- ½ cup Shredded mozzarella
- Pizza toppings as desired
Instructions
