Beef Walnut Slider

Our beef walnut slider have a little sumthin' sumthin' with a 1,2 punch.

Ingredients
  

  • ½ cup Cucumber finely shredded
  • cup Greek Yogurt full-fat
  • 5 Garlic cloves minced
  • 3 tbsp Extra Virgin Olive Oil divided
  • 1 tbsp White vinegar
  • ½ tsp Sea salt
  • 2 tbsp Fresh dill chopped
  • 1 tsp Ground black pepper
  • 1 tsp Smoked paprika
  • 2 tsp Kosher salt
  • 1 cup Panko bread crumbs
  • 1 lb. Ground beef or Ground lamb
  • 1 Large egg
  • 3 tbsp Walnuts finely chopped
  • 1 tbsp Capers chopped
  • ½ cup Dill and cilantro chopped
  • ¼ tsp Cayenne pepper
  • 8 Brioche slider buns
  • ¼ cup Red onions thinly sliced
  • cup Arugula

Instructions
 

Tzatziki Sauce

  • Combine the Greek yogurt, 2 tablespoons of minced garlic, 2 tbsp of EVOO, the sea salt, and vinegar into a large container, stir well. Cover and refrigerate overnight.
  • Grate the cucumber and drain through a mesh sieve overnight in the refrigerate.
  • Add the grated cucumbers and 2 tablespoons of dill into the yogurt mixture. Stir well and season to taste with salt and pepper. Refrigerate until ready for use.

The Slider

  • Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
  • Finely chop up half a cup of fresh dill and cilantro. Add the herbs to a large bowl.
  • Finely grate 2 garlic cloves into the bowl, along with the walnuts and capers. Whisk in the egg, EVOO, salt, pepper, smoked paprika, and cayenne pepper.
  • Add in the ground beef or lamb as well as the panko crumbs. Mix gently with your hands. Form 8 slider patties, transfer to the prepared baking sheet. Bake for 8 to 10 minutes or until 150 degrees F.
  • Spread the tzatziki sauce on the bottom half of each slider bun, then top with one patty. Top it off with arugula aand thinly sliced red onions.
