Cranberry Orange Margarita

Fresh Cranberry Juice
- 2½ cups Cranberries fresh or frozen
- ¼ cup Fresh lemon juice
- ¼ cup Fresh Orange juice
- ½ cup Granulated sugar
- 3 cups Filtered water
Sugared Cranberries
- 12 oz. Cranberries fresh or frozen
- ½ cup Water
- 1¼ cup Granulated sugar more for dusting
Cranberry Orange Margarita
- 1 cup Tequila
- 1 cup Fresh cranberry juice
- ½ cup Fresh lime juice
- ¼ cup Fresh orange juice
- ½ cup Orange liquor
- Sugared cranberries for garnish
- Sliced limes for garnish
For the Cranberry Juice:
In a saucepan, bring the cranberries and water to a boil.
Reduce the heat to a simmer and cover the saucepan. Allow to cook for 20 minutes or until the cranberries begin to pop.
Using a fine strainer, strain the juice. Apply pressure to the cranberries using the back of the spoon. Discard the cranberries.
Return the cranberry juice back to the saucepan. Stir in the lemon juice, orange juice, and granulated sugar. Bring to a boil. Cook until the sugar completely dissolves. Remove from the heat and cool until ready to use.
For the Sugared Cranberries:
In a saucepan bring ½ a cup of water and ½ a cup of sugar to a boil or until the sugar completely dissolves (approx. 4 minutes). Remove from the heat. Stir in the cranberries and allow to sit in the simple syrup for 2 hours.
Line a cookie sheet with parchment paper. Strain the cranberries. Transfer to the prepared cookie sheet. Toss the cranberries with the remaining sugar. Allow to dry in a single layer for a minimum of 1 ½ hours.
Cranberry Orange Margarita
Combine all the ingredients into a glass pitcher and stir to combine. Cover with plastic wrap and keep chilled until ready to serve.
Before serving, sugar the rims of 4 glasses (if desired). Add ice to each glass and pour the margarita into the prepared glasses. Garnish with the sugared cranberries and lime slices. Cheers!
