Spinach Stuffed Mushrooms
Spinach stuffed mushrooms are the perfect appetizer or tapas theme gathering. It's bite-size, tasty, creamy, cheesy, vibrant, and did we mention delicious?!

- 10 Portobello mushrooms
- 1 tbsp Unsalted butter
- 2 Garlic gloves minced
- 4 oz Cream cheese
- Ground black pepper
- Kosher salt
- 2 cups Fresh spinach
- 1/4 cup Mozzerella Cheese
- 1 tbsp Parsley garnish
Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
Remove the stems from the mushrooms. And place the top half the mushrooms onto the baking sheet. Mince the stems.
In a medium size pan, melt the unsalted butter. Add in the minced stems and garlic. Stir and saute for 2-3 minutes.
Add in the fresh spinach, cook until it begins to wilt. Season with salt and pepper.
Next add the cream cheese, season to taste. Stir the cream cheese until it melts and is well combined with the spinach.
Add a spoonful of the spinach mixture to each mushroom top. Sprinkle mozzerella on top of each stuffed mushroom.
Bake for 15 minutes or until golden brown.
