Gluten Free Blueberry Oatmeal Pancakes

Oatmeal pancakes hit the spot for fluffy goodness fulfillment. These pancakes are a great healthy gluten-fee alternative to traditional pancakes. Still incredibly tasting, loaded with blueberries, and bananas!

Ingredients
  

  • 2 Large eggs separated
  • 1 tsp Vanilla extract
  • ½ cup Blueberries
  • 1 tsp Baking powder
  • 2 Bananas mashed
  • 100 g GF roll oats crushed
  • Pinch of salt
  • Splash of milk

Instructions
 

  • In a large bowl, mash the bananas until smooth.Next, separate the eggs. Using an electric mixer or hand mixer whip the egg whites until stiff peaks form.
  • Mix the egg yolks, mashed bananas, vanilla extract, and splash of milk until well combined.
  • Then mix in the crushed rolled oats. Carefully fold in the blueberries and whipped egg whites.
  • Heat a medium nonstick skillet over medium heat. Add approximately 1/4-cup scoop of the pancake batter. Smooth out to form an even layer. Cook for 2–3 minutes until you start to see bubbles forming on the surface. Flip and cook until the other side is golden brown, additional 1–2 minutes.
  • Garnish your pancakes with your favorite toppings! Enjoy!
