Fluffy Waffles with Lemon Blueberry Compote

Fluffy mini waffles with a lemon blueberry compote is definitely a crowd pleaser. Oh the joy a crisp heavenly fluffy waffle brings! With a just the right amount of warm sugary blueberries and a hint of citrus.

Equipment

  • Waffle Iron (mini or standard size)
  • Electric mixer

Ingredients
  

  • cup Fresh blueberries
  • 1/4 cup Sugar
  • 1 Tbsp Lemon juice
  • 2 tsp Lemon zest
  • tsp Kosher Salt
  • cup All purpose Flour
  • 1/2 Tbsp Light brown sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 Large Eggs separated
  • 1/2 cup Sparkling Water club soda
  • 1 tsp Vanilla extract
  • 1/2 cup Buttermilk

Instructions
 

For Lemon Blueberry Compote:

  • In a small saucepan add 1¼ cup of the fresh blueberries to the pan. Along with the lemon zest, kosher salt, and sugar. Give the pan a quick stir and allow the blueberries to cook for 5-8 minutes or until they burst. (Note: When the blueberries actually begin to burst, you'll observed a jam like consistency).
  • Once this occurs, add the other half of the blueberries along with the lemon juice. Stir the mixture occasionally. When the mixture begins to boil, remove from the heat. Allow the lemon blueberry compote to sit at room temperature or until ready to serve.*

For Fluffy Waffles:

  • Preheat the oven to 290 degrees F. Heat a waffle iron until very hot.
  • In a medium sized bowl add the egg yolks, vanilla extract, melted butter, and buttermilk. Mix well and set aside.
  • Place the egg whites in the bowl of the electric mixer. Whisk the egg whites on high-speed until soft-sift peaks are formed.
  • In a separate bowl whisk together the following ingredients: all-purpose flour, kosher salt, baking soda, baking powder, light brown sugar, and sparkling water. Mix well.
  • Next add the wet ingredients to the flour mixture. Stir well. Lastly fold in the egg whites.
  • Coat the waffle iron with a non-stick oil spray. Pour the batter onto the iron. Cook until golden brown. Transfer to a baking sheet and keep warm in the oven. Serve with the lemon blueberry compote, powdered sugar, butter, and/or warm maple syrup.

Notes

*If making the compote days in advance, refrigerate in airtight container. This compote can remain refrigerated for up to two weeks.
