Oven Roasted Garlic Broccolini

This dish is simple, delicious, vegan, garlicky, and a whole lot of goodness! Oven roasted garlic broccolini is an amazing side dish for chicken, steak, tofu, etc.

Ingredients
  

  • 1 brunch Broccolini ends trimmed off
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Dark soy sauce
  • 2 Garlic cloves minced
  • ΒΌ tsp Red pepper flakes
  • Sea salt
  • Freshly ground black pepper

Instructions
 

  • Preheat the oven to 425 degrees F. Line a large sheet pan with parchment paper.
  • Trim off any rough ends on the broccolini. Remove the leaves as well.
  • In a large bowl, mix together the extra virgin olive oil, soy sauce, and minced garlic. Toss the broccolini into the mixture.
  • Spread out the coated broccolini onto the prepared sheet pan in a single layer (make sure to not overlap the veggies). Sprinkle salt, black pepper, and red pepper flakes over the coated broccolini.
  • Bake for 15 minutes or until the tips appear golden brown and crisp. Remove from the oven and serve hot.
