Pumpkin Spice Latte Waffles

Ingredients
  

  • cups GF All purpose flour
  • ¾ tsp Kosher salt
  • 2 Large eggs separated
  • 1 tsp Pumpkin spice
  • 2 tsp Vanilla extract
  • 1 cup Pumpkin puree
  • ½ cup Strong brewed coffee
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • 3 tbsp Dark brown sugar
  • ½ cup Unsalted butter melted
  • cup Heavy cream or buttermilk
  • ¼ tsp Xanthan gum

Instructions
 

  • Preheat the waffle iron.
  • Using a handheld electric mixer, whisk up the egg whites until stiff peaks are formed.
  • In a measuring cup combine together the egg yolks, melted unsalted butter, vanilla extract, and heavy cream. Set aside.
  • In a large bowl whisk together the pumpkin spice, kosher salt, xanthan gum, GF all purpose flour, baking soda, baking powder, and dark brown sugar. Add the wet ingredients from the measuring cup into the bowl. Mix well.
  • Mix in the pumpkin puree and brewed coffee. Lastly, fold the egg whites into the batter.
  • Generously spray the waffle iron with cooking spray. Pour the recommended amount of batter (by manufacturer) into the waffle iron (for a mini waffle maker 2-3 tablespoons). Cook until golden brown. Repeat for all remaining waffle batter.
