The Wings Dry Rub
Chicken in general always needs that extra push to create a remarkable taste. These chicken wings are placed in a dry rub overnight. Then baked to ultimate perfection. The dry rub features at least 9 different seasonings. Consisting of: kosher salt, smoked sea salt, black pepper, cumin, cayenne pepper, chili powder, paprika, onion powder, and garlic powder. The use of onion and garlic powder is to avoid burning the actual ingredients in a high degree oven. Out of all seasonings used, cayenne pepper is the true golden star.
The cayenne pepper just adds that needed heat for a spicy lover. Basic seasonings such as salt and pepper help the chicken wings. In particular the salt does most of the work. Salt makes the other flavors of the wing more noticeable. The pepper just adds a little sumthin’ sumthin’ to the wings. To make the dry rub simply mix all seasonings above into a bowl. Then, coat the chicken wings with the seasoning. Make sure all sides of the wings are well seasoned. Next, place the wings into a storage bag or airtight container. Refrigerate overnight or up to 48 hours for more dept flavor.
The Bake
Now its time to bake those dry rubbed wings. To get the crispy skin without frying, preheat the oven to 450 degrees F. In the meantime, take a cookie sheet and cooling rack out. Place the cooling rack on top of the cookie sheet. Then, spray the cooling rack with olive oil or another spray oil. Add the wings and cook for 10-15 minutes or until golden brown. Next, turn down the oven to 400 degrees F and continue to cook the wings for 35 minutes.

- Cookie sheet
- Cooling rack
Ingredients
- 1 tsp Kosher Salt
- 1 tsp Fresh black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Cumin
- 1 tsp Chili powder
- 1/3 tsp Smoked Sea salt
- 1 tsp Hungarian paprika
- 2 tsp Cayenne Pepper
- 2 lbs. Chicken wings
- Spray Olive Oil
Instructions
- In a medium sized bowl add the following spices: cayenne pepper, Hungarian paprika, smoked seat salt, chili powder, onion powder, fresh black pepper, kosher salt, cumin, and garlic powder. Mix well.
- Sprinkle half the spices onto one side of the wings. Then rub in. Next repeat on the other side.
- Place the seasoned wings into a storage bag or container. Refrigerate overnight or up to 48 hours.
- Preheat the oven to 450 degrees F.
- Spray a rack with olive oil. The place the seasoned chicken wings on to the rack. Bake for 10-15 minutes or until golden brown.
- Lower the temperature to 425 degrees F. Continue to bake for 30 minutes. Flip the wings half way through cooking.
- Remove from the oven. Serve hot with your favorite dips.
