Preparing the Salmon Bites
Well alright..alright..alright let’s make the little bites! Using a cutting board cut-up an organic cucumber. Next, lay them out on your serving dish of choice. Then, cut the avocado in half, remove the pit and scoop out all that goodness. Next, mash the avocado using a spoon and season with kosher salt and black pepper. To prevent the avocado from browning squeeze fresh lemon or lime juice over it. Remove the smoked salmon from the packaging and again squeeze a little citrus juice on top if you desire. Nicely scoop a little dollop of avocado on top of each cucumber slices. Then place a little piece of the smoked salmon and garnish with an herb of your choice. Ta-da a quick and easy appetizer!

Smoked Salmon Bites with Avocado and Cucumbers
Ingredients
- 1 Large organic cucumber
- 6 oz. Smoked salmon cut into small pieces
- 1 Avocado peeled and pit removed
- Dill garnish
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 Lemon or lime
Instructions
- Slice the cucumber approx. 1/4-inch thick and lay flat on a serving tray.
- Mash the avocado in a medium-size bowl using a fork. Season with salt and pepper. Then, squeeze half the lime/lemon over the avocado.
- Spread a small amount of avocado on to each cucumber slice. Next, top off the cucumber bite with sliced smoked salmon.
- Garnish each bite with dill. Serve immediately.
