Walk down memory lane…
I remember the first time I ever had broccolini….let me paint the picture. The year was 2003, I was spending the night over my aunts house. She made a simple dinner for me and my cousins. The dinner was roasted chicken with mashed potatoes and broccolini. What I thought was “broccoli”, but it taste a little bitter and longer for broccoli. So I asked my aunt what is this? She explained what I was eating and since then I always preferred broccolini over broccoli. Sorry broccoli!
How to roast garlic broccolini
Roasting any type of vegetable it pretty darn easy. All you need is a baking sheet, salt, pepper, garlic, soy sauce, red pepper flakes, excellent quality olive oil and, of course, the broccolini.
This recipe only takes 15 minutes to whip up. For the best results keep the broccolini in a single layer on a prepared sheet pan. Below you’ll find the step-by-step instructions to stellar garlic broccolini.
- Preheat the oven to 425 degrees F. Line a large sheet pan with parchment paper.
- Trim off any rough ends on the broccolini. Remove the leaves as well.
- In a large bowl mix together the extra virgin olive oil, soy sauce, and minced garlic. Toss the broccolini into the mixture. Next, spread the coated broccolini onto the prepared sheet pan in a single layer. (Make sure to not overlap the veggies, it will not get as crispy). - Sprinkle some salt, black pepper, and red pepper flakes over the coated broccolini. Bake for 15 minutes or until the tips appear golden brown and crisp.
- Remove from the oven and serve hot.
