Funfetti sheet cake just brings smiling faces your way! It’s colorful, it’s light, it’s fluffy, it’s cake, and it’s pretty darn great. This cake is the perfect addition to any celebration from Mother’s Day to a Tea Party….you name it!
Making Quarter Funfetti Sheet Cake
This recipe is pretty simple, it’s basically our amazing funfetti cupcake recipe. If making this cake for a larger crowd…feel free to just double the recipe. To bake this funfetti sheet cake, first preheat the oven to 350 degrees F. In a medium sized bowl, add the following ingredients: all-purpose flour, cake flour, kosher salt, baking soda, and baking powder. Mix these ingredients well and set aside. Using an electric mixer, beat the unsalted butter and sugar until smooth (roughly 2-4 minutes). Next, add in the one egg and continue to mix until the egg is fully incorporated. Now, rotate between adding the liquids (milk and yogurt) and dry ingredients (flour mixture) until all ingredients are mixed well. Then, fold in the rainbow sprinkles.
After all ingredients are well mixed, fill the cupcake liners half-way. During the baking process the cake mix will expand to fill the entire quarter sheet pan. Bake for 22-30 minutes or until toothpick inserted comes out clean. Then, allow the cupcakes to rest in the muffin pan for a few minutes before moving to a cooling rack. Lastly, decorate and enjoy!
The use of Cake Flour & All-Purpose Flour
With cakes or cupcakes I always like to use a mixture of cake flour and all-purpose flour. It provides the most fluffiness and desired scrumptious taste. Using only all-purpose flour creates a more dense, chewy, and crumb-like texture. Cake flour contains less gluten and protein compared to all-purpose flour. It’s also lighter, softer, finer, and paler in color unlike all-purpose. When using a ratio of both, it provides that good texture needed for a great cupcake.
What kind of sprinkles?
Since we are talking sprinkles, which one should you use? The best sprinkles for baking are either Quin or Jimmie sprinkles. Both are available at your local grocery stores and amazon. Personally, I use this brand Cake Mate sprinkles from amazon.
Jazzing up the Funfetti Sheet Cake
Sheet cake on its on is pretty stellar. Slapping on a little buttercream and calling it day is perfectly okay. But, if you love to be extra well just keep on reading! To get these little bite-size circles we used these metal cookie cutter sets from amazon. The item is called Metal Cookie Cutter Set and if you click the bold words it’ll lead you right to the product. You can cut the cake into whatever size circle your little heart desires. Just have fun with it! And create a new memory for your family.
Quick Tips
Alright, you’ve made this sheet cake, but you’re in quarantine with no one to share it with. What do you do? Here’s a few tips:
- Cut the cake in half. Freeze half the cake in a ziplock freezer storage bag. The cake will be safe in the freezer for up to 3 months.
- Or cut the cake into small circles. Using circular cookie cutters, cut the cake into numerous circles. Place all the mini cakes into a freezer storage bag. Freeze the cake and whenever you have a craving for funfetti cake thaw a little piece of cake. Boom!

Funfetti “Quarter” Sheet Cake
Ingredients
- 3/4 cup Cake flour sifted
- 1/3 cup All-purpose flour sifted
- 1 Large egg
- 1/2 cup Unsalted butter softened
- 1 tsp Vanilla extract
- 1/4 tsp Kosher salt
- 1/2 cup Granulated sugar
- 1/2 tsp Baking powder
- 1/3 tsp Baking soda
- 1/4 cup Rainbow sprinkles
- 1/3 cup Sour cream
- 1/4 cup Whole milk
American Buttercream
- 1/2 tsp Almond extract
- 1/4 tsp Salt
- 2 cups Powdered sugar sifted
- 1 tsp Vanilla extract
- 6 tbsp Unsalted butter softened
Instructions
Funfetti Quarter Size Sheet Cake
- Preheat the oven to 350 degrees F. Line a quarter size sheet pan with parchment paper.
- Place the all-purpose flour, cake flour, baking soda, baking powder, and kosher salt into a medium sized bowl. Whisk and set aside.
- Add unsalted butter and granulated sugar in a bowl of an electric mixer. Mix the ingredients on medium speed until the mixture is while incorporated and fluffy. (Roughly 1-2 minutes)
- Place the egg, sour cream, milk, and vanilla extract in a measuring cup. Whisk together and set aside. Stir in half of the flour mixture and half of the liquid mixture. Once fully incorporated. Turn off the mixer and add the remaining flour mixture and liquid mixture. Beat on medium speed into the batter is well mixed. Add the sprinkles
- Once added, stir the cake batter by hand with a spatula. Transfer the cake batter into the lined sheet pan.
- Bake for 25 to 30 minutes, or until the inserted toothpick comes out clean from the center of the cake pan. Cool the mini funfetti cake completely, before frosting.
- To make mini funfetti cakes, once the cakes have cooled using a 2.5 or 3 inch circle cookie cutter. Cut out cicles. Once completed decorate in buttercream and sprinkles.
American Buttercream
- Place the room temperature butter in the electric mix. Beat on medium speed for 2 minutes.
- Add the sifted powdered sugar in small increments. Beat together, and repeat until all powdered sugar is incorporated. (To help with over thickens of the frosting add the 1-2 tablespoons of milk/heavy cream.) Stir in the almond and vanilla extract until combined.
yumm! I made these for my birthday and had used the cookie cutter so that it’s individual portioning. A bit more COVID friendly. Delicious!
