There’s so many different kinds of oats available for purchase. But which kind should you use for this recipe? That’s a good question. For the best textured pancakes we recommend the use of old fashion rolled oats.
So how are rolled oats made? This type of whole grain is steamed and pressed with steel rollers. By using the rolling process, the actual cooking type is shorten.
What are the different types of oats? Here’s the different kinds of oats: instant, quick, steel cut, and old fashion. Quick oats is cut into small pieces and rolled thinner and steamed longer. Steel cut are groats that resemble sharp blades, it cooks quicker and has a more chewy texture. Instant oats are similar to quick oats, the only difference is it’s much thinner and cut smaller.

Tips & Tricks
- Interested in a more filing pancake? Try adding chia seeds or flaxseeds into the batter before cooking.
- For a more fluffier pancake, try to leave the pancake batter thick.
- Want to mix things up? Swap out the blueberries for chocolate chips, peanut butter, or your favorite nuts.
- Make sure to be gentle and fold in the egg whites, after incorporating all the other ingredients.
Making GF Blueberry Oatmeal Pancakes
In general, pancakes are so easy and simple to make. These pancakes are no exception to the rule! So let’s divine in shall we?
- In a large bowl, mash the bananas until smooth.
- Next, separate the eggs. Using an electric mixer or hand mixer whip the egg whites until stiff peaks form.
- Mix the egg yolks, mashed bananas, vanilla extract, and splash of milk until well combined. Then mix in the crushed rolled oats.
- Carefully fold in the blueberries and whipped egg whites.
- Heat a medium nonstick skillet over medium heat. Add a 1/4-cup scoop of the pancake batter. Smooth out to form an even layer. Cook for 2–3 minutes until you start to see bubbles forming on the surface. Flip and cook until the other side is golden brown, additional 1–2 minutes.
- Garnish your pancakes with your favorite toppings!

- 1 tsp Vanilla extract
- ½ cup Blueberries
- 1 tsp Baking powder
- 2 Bananas mashed
- 100 g GF roll oats crushed
- Pinch of salt
- Splash of milk
