The Lemon Blueberry Compote
What is Compote?
Compote is like a fruit preserved. It’s basically a dessert syrup that can be served hot or cold. A compote can be made with any fruit combination with the addition of water, sugar, and spices of your choosing. This delicious compote topping has infinite serving options. For an example, the topping could be strained and served as a martini with vodka or gin and ice. Other great pairings for a compote include waffles, pancakes, ice cream, french toast, and yogurt. Again the list is limitless, the sky is the limit for compote.
How to make the Lemon Blueberry Compote
Using a small saucepan add half of the fresh blueberries to the pan. In addition to the blueberries add the lemon zest, sugar, and kosher salt. Instead of water, lemon juice is used in this recipe. But, the lemon juice will not be added until after the blueberries burst. Give the pan a quick stir and allow the blueberries to cook for 5-8 minutes or until they burst. When the blueberries actually begin to burst, you’ll notice a jam-like consistency. Once this occurs, add in the remaining blueberries along with the lemon juice. Stir the mixture occasionally.
When the mixture begins to boil, remove from the heat. Allow the lemon blueberry compote to sit at room temperature or until ready to serve. If making the compote days in advance, refrigerate in airtight container. This compote can remain refrigerated for up to two weeks.
Making the Mini Fluffy Waffles
The final compote to this dish is the waffles of course. If glancing at this recipe, you’ll notice an ingredient not normally added to a waffle mix. What ingredient might that be? Use of club soda or sparkling water.
Use of Carbonated Water
Carbonated water is added to the waffle mix to create the ultimate fluffiness. The carbonated water gives the unique texture of the waffle. It has a crisp finish with a soft pillow-like fluffy inside. The carbonation sends this waffle to the moon. The bubbles ( caused by carbon dioxide gas) makes the batter more airy and lighter. Basically amplifying the batter. You’ll notice when heating the batter in the waffle maker it begins to rise rapidly.
What kind of carbonation to use? Again just like the blueberry compote, there’s limitless options. If sparkling water is not available use club soda, champagne, prosecco, or seltzer water. To create the lightest field to the batter a carbonated liquid is needed.
Preparing and cooking the Fluffy Waffles
To make the fluffy waffle batter you’ll need a measuring cup, 2 medium-sized bowls, and an electric mixer. To make the fluffy waffles heat a waffle iron until very hot. First, melt the butter in the microwave using the measuring cup. In one of the bowls add the (2) egg yolks. Place the egg whites in the bowl of the electric mixer. Whisk the egg whites on high-speed until soft-sift peaks are formed. In a separate bowl whisk together the following ingredients: all-purpose flour, kosher salt, baking soda, baking powder, light brown sugar, and sparkling water.
Add the following wet ingredients to the egg yolks: melted butter, vanilla extract, and buttermilk. Stir the mixture well. Next, add the wet ingredients to the flour mixture. Stir well. Lastly fold in the egg whites. Set the oven temperature to warm or 290 degrees F.Then coat the waffle iron with a non-stick oil spray. Pour the batter onto the iron. Cook until golden brown. Transfer to a baking sheet and keep warm in the oven. Serve with the lemon blueberry compote, powdered sugar, butter, and/or warm maple syrup. Enjoy.

Ingredients
- 2½ cup Fresh blueberries
- 1/4 cup Sugar
- 1 Tbsp Lemon juice
- 2 tsp Lemon zest
- 1½ tsp Kosher Salt
- 1¼ cup All purpose Flour
- 1/2 Tbsp Light brown sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 Large Eggs separated
- 1/2 cup Sparkling Water club soda
- 1 tsp Vanilla extract
- 1/2 cup Buttermilk
Instructions
For Lemon Blueberry Compote:
- In a small saucepan add 1¼ cup of the fresh blueberries to the pan. Along with the lemon zest, kosher salt, and sugar. Give the pan a quick stir and allow the blueberries to cook for 5-8 minutes or until they burst. (Note: When the blueberries actually begin to burst, you'll observed a jam like consistency).
- Once this occurs, add the other half of the blueberries along with the lemon juice. Stir the mixture occasionally. When the mixture begins to boil, remove from the heat. Allow the lemon blueberry compote to sit at room temperature or until ready to serve.*
