Simplicity called and we have answered. Introducing tips to a successful brunch. Wanna hear it? Here it go….
- Toast is the fun part! There’s so many different ways to toast it up hahaha.
- Slice any bread of choice (or go-to is sourdough) about 0.25-0.5 inches thick and toast until golden brown.
- Think that bread is for losers? Well try using Ezekiel Bread, it’s a good source of protein, it’s packed with minerals, and it doesn’t use any flour! How awesome is that?
- Seasoning is your friend! Blame food is never an option, so be sure to add the basics. AKA salt and pepper.
- Add in fresh herbs! Freshly chopped herbs not only add a touch of color, but can really enhance the flavor of your brunch toast.
- Most important tip was saved for last! Be sure to HAVE FUN!!! Fun = good food.
Toast 4 Ways
On to this best part! Actually making the food and eating it! Below you’ll find a little deets on each toast flavor! Some of the names are more original than others…hahaha
Smoked Salmon
This one is a classic spin on the famous lox bagel. Just remove the bagel. Instead of using normal cream cheese, we used Philadelphia Chive & Onion cream cheese. It is packed with tasty flavor and simply elevates this toast. To shake things up mashed avocado was spread across the toast at well. Along with thinly sliced red onions, capers, dill, and of course smoked salmon.
ABE Brunch Toast
Next beauty is our ABE brunch toast aka avocado, bacon, and a fried egg. Some restaurants would called this a trifecta! Because it features eggs, bread, and meat. Added pop up color for this bad boy was a mashed avocado!
Tomato Burrata & Herbs
Now let’s talk about this cheesy goodness. The melted burrata is a total MUST! Second roasting the cherry tomatoes makes this toast special a game changer. Lastly, topping it off with fresh herbs and a balsamic glaze is oh so necessary!
Basic Sally Toast
Last, but not least we have the basic Sally brunch toast. It’s simple and hella tasty using only 6 ingredients: bread, EVOO, tomatoes, herbs, salt, and pepper!

Brunch Toast 4 Ways
Ingredients
- 1 Sourdough Boule cut into ½" slices
- ½ cup Extra Virgin Olive Oil
- 1 pint Cherry Tomatoes
- 3 Garlic cloves thinly sliced
- 2 Large Avocados
- 2 Small Tomatoes sliced thinly
- 2 oz. Smoked salmon
- 1 tbsp. Capers
- 2 tbsp. Red onions cut ⅛" thick
- ½ tsp Fresh lemon juice
- 1 tsp Fresh dill
- ¼ cup Whipped cream cheese
- 1 tbsp Fresh basil
- 4 tsp Fresh Lime Juice
- 2 Small burrata balls
- 2 Large eggs
- 4 slices Bacon
- 1 tbsp Chives
- Kosher salt
- Freshly ground black pepper
Instructions
- Place the sliced bread onto a baking sheet. Be sure the oven rack is at least 6 inches from the broiling element. Place the broiler on high. Broil the sliced bread until golden brown, approximately 1-3 minutes per a side.
ABE Toast
- In a nonstick skillet over medium high heat cook the bacon until crispy, approximately 3-5 minutes per side. Transfer the cooked bacon onto a plate lined with paper towels.
- In another nonstick skillet heat one tablespoon of extra virgin olive oil over medium heat. Crack an egg into the pan and cook until the egg whites are set approximately 1-3 minutes.
- Scoop out both halves of an avocado into a bowl. Mash using a fork and season with 2 teaspoons of lime juice, salt, and pepper. Evenly divide the mashed avocado onto the toast.
- Place two strips of bacon onto each piece of toast. Top the bacon with a fried egg and season with freshly ground black pepper. Repeat for the other slice of toast.
Basic Sally
- Spread the thinly tomatoes evenly onto two pieces of toast. Season with salt and pepper. Drizzle olive oil over the tomatoes. Garnish with fresh herbs.
Burrata & Tomato
- Preheat the oven to 400 degrees F. Line a cookie sheet with parchment paper.
- Add one pint of cherry tomatoes, three thinly sliced garlic cloves, three tablespoons of extra virgin olive oil, salt, and pepper to the cookie sheet. Stir well. Bake for 20 minutes. Remove from the oven and allow to cool down.
- In the meantime, cut the burrata balls in half and spread across the two pieces of toast. Place the toast back in the broil for 1-3 minutes or until the cheese melts.
- Add the roasted tomatoes on top of the burrata bread. Followed by fresh basil and balsamic glaze.
Smoked Salmon
- Scoop out both halves of an avocado into a bowl. Mash using a fork and season with 2 teaspoons of lime juice, salt, and pepper. Lightly mash the avocado using a fork.
- Spread the cream cheese over the toasted bread slices. Next evenly spread the mashed avocado over the cream cheese. Layer slices of smoked salmon on top. Sprinkle the lemon juice over the smoked salmon.
- Add the thinly sliced red onions, capers, and fresh dill. Season to taste.
