For the extra flare, ingredients such as dill, capers, cilantro, and walnuts are added. Say what now? Nuts! The crushed walnuts make these sliders suitable for any occasion.

Let’s Talk Beef

Sometimes it’s totally necessary to make everything by hand. Why you ask? Because the amount of dedication and time taken to make the dish, should always create an epic flavor profile. Plus it taste way better than store brought slider patties.

Why Beef?

Ground beef is utilized in this recipe because of the amount of flavor that it is able to develop. What do you mean? In this recipe, 80% lean, 20% fat ground beef is used, the fat in the beef helps keep the sliders moist. As well as enhance the flavors of the added ingredients such as the garlic. Other ground meats that can be used are lamb, turkey, or chicken. Keep in the mind the cooking time for these kinds of meat vary. From the three other options mentioned, I know lamb would give the same effect as the ground beef. Just cook the lamb for only 5-8 minutes for a medium-rare finish. Especially since this dish is Greek inspired.

The Other Ingredients

Let’s discuss the other ingredients and the role they play in these delicious sliders!

  • Cilantro – We are huge fans of cilantro, but if you prefer parsley feel free to use it instead.
  • Dill – Great substitute for parsley and provides a fresh citrus like taste.
  • Capers – Capers are those cute little things that taste salty, lemony, and olive-y. Simply delicious!
  • Walnuts – The walnuts give a little crunch to the slider, providing a completely different flavor.
  • Olive oil – Think of the olive oil as a like a milk component, giving a little liquid to balance the panko bread crumbs.
  • Egg – The egg is used as a binding agent for the slider.
  • Panko bread crumbs – Lastly, the bread crumbs keep everything in line. So it’s not an overly wet slider or dry slider.

Making the Beef Walnut Slider

Alright who’s ready for a slider?

  1. Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
  2. Finely chop-up dill and cilantro. Place into a large bowl and set aside.
  3. Grate finely 2 garlic cloves into the bowl. Along with a handful of finely chopped walnuts and 1 tablespoon of chopped capers.
  4. Next, whisk in the egg, EVOO, salt, pepper, smoked paprika, and a pinch of cayenne pepper.
  5. Add in the ground beef or lamb as well as the panko bread crumbs. Carefully mix with your hands.
  6. Form 8 slider patties, transfer to the prepared baking sheet.
  7. Bake for 8 to 10 minutes or until 150 degrees F.

Great Toppings for the Beef Walnut Slider

So you’ve made the sliders….now what? Finding the perfect sauce, appetizers, or side dishes can be exhausting. But, likely for you we got you covered!

Our go-to toppings are usually greenery such as butter lettuce or arugula. In terms of acidity or spice we like pickled red onions or just thinly sliced red onions. Now the last component for this slider is a killer sauce. So we kept it traditional with a homemade tzatziki sauce. This sauce takes a few days to make, but is like the icing of a cake. A MUST HAVE!!

Beef Walnut Slider

Ingredients
  

  • ½ cup Cucumber finely shredded
  • cup Greek Yogurt full-fat
  • 5 Garlic cloves minced
  • 3 tbsp Extra Virgin Olive Oil divided
  • 1 tbsp White vinegar
  • ½ tsp Sea salt
  • 2 tbsp Fresh dill chopped
  • 1 tsp Ground black pepper
  • 1 tsp Smoked paprika
  • 2 tsp Kosher salt
  • 1 cup Panko bread crumbs
  • 1 lb. Ground beef or Ground lamb
  • 1 Large egg
  • 3 tbsp Walnuts finely chopped
  • 1 tbsp Capers chopped
  • ½ cup Dill and cilantro chopped
  • ¼ tsp Cayenne pepper
  • 8 Brioche slider buns
  • ¼ cup Red onions thinly sliced
  • cup Arugula

Instructions
 

Tzatziki Sauce

  • Combine the Greek yogurt, 2 tablespoons of minced garlic, 2 tbsp of EVOO, the sea salt, and vinegar into a large container, stir well. Cover and refrigerate overnight.
  • Grate the cucumber and drain through a mesh sieve overnight in the refrigerate.
  • Add the grated cucumbers and 2 tablespoons of dill into the yogurt mixture. Stir well and season to taste with salt and pepper. Refrigerate until ready for use.

The Slider

  • Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
  • Finely chop up half a cup of fresh dill and cilantro. Add the herbs to a large bowl.
  • Finely grate 2 garlic cloves into the bowl, along with the walnuts and capers. Whisk in the egg, EVOO, salt, pepper, smoked paprika, and cayenne pepper.
  • Add in the ground beef or lamb as well as the panko crumbs. Mix gently with your hands. Form 8 slider patties, transfer to the prepared baking sheet. Bake for 8 to 10 minutes or until 150 degrees F.
  • Spread the tzatziki sauce on the bottom half of each slider bun, then top with one patty. Top it off with arugula aand thinly sliced red onions.
