These gluten free pumpkin spice latte waffles provide fall in one bite! Some days just call for a special treat, ya’know. Our GF pumpkin spice latte waffles are incredibly fluffy, sweet, caffeinated, and a joy to eat.

Mini vs. Regular Sized Waffles
Maybe you’ve noticed…but here at Dulcet we love mini waffle makers. BUT we understand people love Belgium waffles or in general larger waffle irons. If you like to make normal-sized waffles, this recipe will make 7-8 waffles. In terms of the outcome, there’s no difference in taste in the two different sizes. The only major difference of course is the size and quantity. So, if feeding a crowd I’ll recommend the mini waffles and for a small family make regular size waffles.
Now we find mini waffles to be so freakin’ cute! Not only are you able to enjoy a waffle, but if you want more you don’t have to feel guilty about it. Also, mini waffle irons are truly affordable and come in some many different shapes and sizes as well. Below are two of our favorite mini waffle makers:
- Dash Mini Waffle Maker – This waffle iron is available in numerous colors, very affordable, and easy to use.
- Mini Pumpkin Waffle Maker – Only available in a bright orange color, one side of the waffle is shaped like a pumpkin. It’s easy to clean, again affordable, and totally Fall appropriate.
Key Ingredients to Fluffy GF Waffles
Alright, so there’s a few ingredients that make these waffles sparkle! So…what are they? Check out the list below:
- Pumpkin Puree – Of course, one cannot claim to make a pumpkin waffle without an actual pumpkin or pumpkin puree. So don’t forget the pumpkin!
- Separated Eggs – Now this recipe is in fact gluten free, so to fluff up the waffles as much as possible separate the eggs. Simply add the egg yolks to the buttermilk and whip up the egg whites until soft peaks are formed.
- Strong Brewed Coffee – The key to these latte waffles in addition to the pumpkin puree is, of course, strong coffee! Yes coffee lovers aim for the dark roast. But, for just regular cup of Joe’s I personally love the Nespresso Pumpkin Spice Cake Coffee…..and that’s what I used. This particular coffee capsule is a level 5, which is not too weak, but not too strong. It’s just right….like Goldilocks.
- Xanthan Gum – This ingredient is a food addictive. It is a lab made ingredient approved by the FDA. It’s normally added to food as either a stabilizer or thickener. Since this recipe is GF, this ingredient is added for the waffles to appear and taste fluffier. Do you really need to add this ingredient? Absolutely not, but if you’re trying to create the exact replica of the waffles shown in the video or pictures. I highly recommend using a small amount of xanthan gum.

Making the Pumpkin Spice Latte Waffles
I know down below….the ingredients list may look a little intimidating, but I promise it’s all worth it. Also, it’s a lot easier than it looks. Like I mentioned earlier, separate the room temperature eggs. Whisk up the egg whites until light and fluffy. In a measuring cup mix together the egg yolks, melted unsalted butter, buttermilk, coffee, vanilla extract, and pumpkin puree. Mix it up and then set it all aside for later.
Up next, sift together the dry ingredients which would include: GF-all purpose flour, baking soda, baking powder, pumpkin spice, and xanthan gum. Now, add the brown sugar into the liquid bowl and mix well. Then, slowly add the dry ingredients into the liquid mixture until well combined. Lastly, fold in the whipped egg whites. And now the batter is ready for use! Generously spray your waffle iron with cooking spray. Spoon in the waffle batter into the center of the iron and cook according to your waffle irons instructions.
Quick Whip Cream
Do you love whip cream? Well….you’re in luck so do we! Whipping up homemade whip cream is incredibly easy. Before whipping the heavy cream, make sure to chill a large bowl in the freezer for 30 minutes to an hour. Why is that necessary? If using a room temperature or hot bowl, more than likely the whip cream will begin to melt. Also, may experience difficulty with the overall process.
Bottom line please chill a large bowl before making whip cream.
So after chilling the bowl add in the whip cream, powdered sugar, and vanilla bean paste. Simply whip until stiff peaks are formed. Congrats! You’ve just made vanilla whip cream. As a finishing touch, sprinkle either ground cinnamon or pumpkin spice on top.

Pumpkin Spice Latte Waffles
Ingredients
- 1½ cups GF All purpose flour
- ¾ tsp Kosher salt
- 2 Large eggs separated
- 1 tsp Pumpkin spice
- 2 tsp Vanilla extract
- 1 cup Pumpkin puree
- ½ cup Strong brewed coffee
- 1 tsp Baking powder
- ½ tsp Baking soda
- 3 tbsp Dark brown sugar
- ½ cup Unsalted butter melted
- ⅓ cup Heavy cream or buttermilk
- ¼ tsp Xanthan gum
Instructions
- Preheat the waffle iron.
- Using a handheld electric mixer, whisk up the egg whites until stiff peaks are formed.
- In a measuring cup combine together the egg yolks, melted unsalted butter, vanilla extract, and heavy cream. Set aside.
- In a large bowl whisk together the pumpkin spice, kosher salt, xanthan gum, GF all purpose flour, baking soda, baking powder, and dark brown sugar. Add the wet ingredients from the measuring cup into the bowl. Mix well.
- Mix in the pumpkin puree and brewed coffee. Lastly, fold the egg whites into the batter.
- Generously spray the waffle iron with cooking spray. Pour the recommended amount of batter (by manufacturer) into the waffle iron (for a mini waffle maker 2-3 tablespoons). Cook until golden brown. Repeat for all remaining waffle batter.
