Brussels sprouts are an absolute favorite of mines. My love for them started around high school. There’s so many ways to make this classic, but this recipe is about the basic preparation.

How to make Roasted Brussels Sprouts

Our favorite way of cooking sprouts is by roasting. But, that’s not the only way this dish could be made. Instead of using an oven, the sprouts could be sauteed or blanched. The choices are limitless. In order to make this dish a few ingredients as well as an oven are needed. The ingredients used are: Brussels sprouts, kosher salt, extra virgin olive oil, and fresh ground black pepper. Just like a great steak needs basic seasons to pop, so do vegetables.

Trimming the Sprouts

Brussels sprouts are basically mini cute cabbages. There’s two ways to trim these sprouts. Some people like to cut off the core of the sprouts. But not us. Sometimes when the core is removed, the entire sprout can fall apart. Leaving you with a bowl of little leaves. Unless preparing a warm/cold salad or chips, just keep the core intact. But, if you prefer removing the core, go ahead and remove it. For this recipe, the only knifing is cutting the sprouts into halves. Because we took the easy way out and purchased trimmed sprouts. In addition to cutting, remove the outside layer of the sprouts.

Roasting the Sprouts

After peeling and cutting the brussels sprouts its time to cook them! Grab a large cookie sheet and line it with parchment paper. Next spread out the sprouts onto the cookie sheet. Season the sprouts generously with fresh ground black pepper and kosher salt. The next step can get a little messy, dress the sprouts with plenty of good olive oil. Make sure all the sprouts are coated in seasoning as well as oil. For a little extra flare, drizzle fresh lemon juice on the sprouts. We recommend using half the juice of a lemon.

Ingredients
  

  • 1.5 lbs. Brussels sprouts trimmed, halved
  • 3 Tbsp Olive oil
  • 1 tsp Kosher salt
  • 1/2 tsp Freshly ground black pepper
  • 1 Tbsp Fresh lemon juice

Instructions
 

  • Preheat oven to 400 degrees F. Line a large cookie sheet with parchment paper.
  • Toss the brussels sprouts in olive oil, kosher salt, fresh ground black pepper, and lemon juice.
  • Roast for 35-45 minutes with occasional tossing until brown and crispy.
